It was opened in 1958 by the Pajares brothers from Aragon, Spain, who initially came to Colombia on business and remained in Bogota to provide people with their Spanish cuisine. Pajares Salinas boasts a rather classic decor to complement its the collection of early 20th century paintings that grace the walls of the restaurant. Many people come to Pajares Salinas to enjoy such delicaces as the Trufado house pate and the Jerez consomme.
