The heart of our dining room is the hearth a classic brick pizza oven where we make thin-crust California pizza. The hearth is also a serving station where there's something different happening at every meal. During breakfast it's an omelet bar at lunchtime, a pasta bar. At dinnertime, we use it to make appetizers and desserts; and during Sunday brunch, to make waffles.
The atmosphere here is very casual, says Chef Dupuis. Some people come in suits, others in jeans. I like to hear the noise and the laughter. We're in the pleasure business. What I'm trying to do is put a smile on your face. And remember our poolside patio for dining among the blooms or under the evening stars.
